Good morning. Here's a sausage, egg, cheese, tomato, and sautéed pepper flatbread with jalapeno aioli just for you. If you sub the breakfast sausage and egg out for, say, steak or chicken, this would also make a delicious lunch.
You'll need:
- Flatbread
- Mozzarella cheese
- Breakfast sausage, chopped into 1" pieces and sautéed until warmed or cooked through depending on the sausage you have
- 1 egg, cooked to your liking (I cooked mine over hard)
- Slices of tomato
- 1/4 bell pepper, sliced, sautéed until nearly softened
- 1/4 cup mayonnaise
- 1/4 chopped pickled jalapenos
- 2 tbsp. jalapeno liquid from the can
Warm your flatbread in a pan. Layer on your sandwich components on one side of your flatbread in the order they are listed, bell peppers on top. Blend the mayo, jalapenos and juice to create your aioli. Top with aioli. Add a dash of salt and pepper. Fold in half. I found that I could have split this into two flatbreads if I had made another egg. You can do that, but if you're hungry...I won't judge.
Add ins: onions, lettuce, spinach, Spanish rice, black beans
