I was first introduced to this combination from the Schulte boys. They've been eating it in wing form for years and it's one thing that I love from their home kitchen. And it's dead easy.
I used drumsticks, because that's what we had on hand, but feel free to use wings or thighs.
What You'll Need:
- 4 Chicken drumsticks
- 2 lemons
- 3-4 sprigs of rosemary
- 1/2 cup of olive oil
- Lawry's or just good old kosher salt
- Pepper
Salt and pepper chicken and set aside. Squeeze lemon juice into a bowl then cut the lemons into slices and add to bowl. Remove rosemary from twig and roughly chop. Take a rolling pin and roll over the rosemary to release more of the aroma and add to the marinade. Add olive oil and whisk. Set aside some marinade for basting then place chicken into the marinade and allow to marinade for at least one hour, but overnight is even better.
Remove chicken from the refrigerator and set oven to 350 degrees. Bake for 35-45 minutes, or until cooked through.
Does it smell good in the house right now or what? Yum.
