I found some amazing Kumato tomatoes at Trader Joe's this week. As they ripen, they get brown, which is odd but also what you want. They're some of the most flavorful tomatoes I've ever had and the only that I have ever put alone in a sandwich, because they're that good.
- Mozzarella, torn basil leaves, a hit of balsamic vinegar, and pinch of kosher salt in a baby baguette
- Bacon and garlic pepper (as seen above) in rye
- Fried egg, melted Swiss cheese, and Canadian bacon in wheat or English muffin
- Or the classic: a hit of salt, pepper, and olive oil in pumpernickel
Like I've said, the classic is amazing with this particular kind of tomato. I'm in love. And since my stomach is literally growling, I may just whip another one up.
